Amount Ingredient
2 lb swordfish, cut into
1/2 x inch cubes
2 med red peppers, seeded
and cut into 1 1/2-inch cubes
4 lrg green onions, quartered
----------------- Satay Sauce: ----------------
1 med onion, chopped
1/2 cup chunky peanut butter
2 clv garlic, crushed
2 tbl fruit chutney
2 tbl vegetable oil
1/2 cup light soy sauce
1 cup orange juice
4 tbl fresh lemon juice
1 sm red chili pepper,
finely chopped
Instructions:
Instructions: Prepare Sauce: In blender or food processor, combine all ingredients and process until smooth.

Thread fish and vegetables onto skewers. Place in dish in single layers and top with 1/2 the sauce. Cover and refrigerate 2 hours.

Grill over medium high heat, brushing often with sauce from bottom of dish, about 10 to 15 minutes or until cooked to your liking.

Serve with the remaining sauce.
