Amount Ingredient
1 cup extra-virgin olive oil
6 tbl Tabasco brand Pepper Sauce
1 tbl chopped fresh basil
1 tbl chopped sundried tomatoes
1/2 tsp chopped fresh cilantro
2 tbl minced fresh garlic
2 tbl capers drained, chopped
2 tbl balsamic vinegar
12 x swordfish steaks, 1"-thk - (8 oz ea)
----------------- CREOLE PEPPER-GARLIC MAYONNAISE ----------------
3 cup mayonnaise
3 tbl Tabasco brand Pepper Sauce
3 tbl lime juice
3 x red bell peppers roasted, peeled,
seeded, and chopped
1/2 cup chopped roasted garlic cloves
1/2 cup sliced green onions
1 tbl fresh cilantro
Instructions:
Instructions: Mix all ingredients of marinade. Place swordfish in marinade. Cover and refrigerate overnight.

Grill or broil swordfish 12 to 15 minutes.

Serve each portion with 1/4 cup of Creole Pepper-Garlic Mayonnaise and rice.

This recipe yields 12 servings.
