4 x carrots peeled, and
sliced on the diagonal
4 x zucchini sliced on diagonal
4 x yellow squash sliced on diagonal
1/4 cup balsamic vinegar
1 tsp minced garlic
1 tsp dried oregano
1 tsp dried basil
8 whl -wheat tortillas
Instructions:
Instructions: Preheat the grill or broiler. In a large bowl, toss the vegetables with the vinegar, garlic, oregano, and basil. Grill or broil until browned and tender on each side. Remove.

Warm the tortillas 30 seconds under the broiler or wrapped in plastic in the microwave to soften.

To assemble, spread 2 tablespoons of Hummus on each tortilla. Top with 1/2 cup of the vegetables and roll up tightly. If desired, slice the rolls on the diagonal to serve.

This recipe yields 8 servings.
