Instructions: In a large bowl add 2 tablespoons olive oil and salt and pepper, then add vegetables to coat. In a hot grill pan or on an outdoor grill, place sliced vegetables and halved red pepper skin-side down. Allow them to sear until tender, and marked, approximately 4 minutes, then turn and grill on the other side for less time. Remove to serving plate, sprinkle with Balsamic vinegar. Serve.
