1/3 cup extra-virgin olive oil
Salt to taste
Freshly-ground black pepper to taste
2 med yellow squash ends trimmed and
discarded, sliced lengthwise 1/4"-thk
1 lrg red bell pepper cored, seeded,
and quartered
3 med zucchini ends trimmed and
discarded, sliced lengthwise 1/4"-thk
2 med eggplants ends trimmed and
discarded, sliced 1/4"-thk rounds

Instructions:
Instructions: Preheat grill pan. Combine olive oil with salt and pepper.

Peel the outer slices of the eggplant and zucchini. Lay the vegetables on a large baking sheet and brush with olive oil. Place vegetables on grill pan, turning just once, until everything is marked with dark stripes, about 10 minutes.

When done transfer to a large platter.

This recipe yields 6 servings.
