Ingredients:

1 lb lean ground beef
1 cup chopped onion
2 x cloves garlic -- minced
10 oz frozen spinach -- thawed and squeezed dry
3 cup cooked long-grain white rice
2 cup grated cheddar cheese
3 lrg eggs
3/4 cup milk
1 tsp salt
Ground black pepper -- to taste
Instructions:
Instructions: Preheat oven to 350 degrees F. In a medium skillet over medium heat, saute ground beef, onion, and garlic until meat is no longer pink and vegetables are tender, about 5 to 10 minutes. Transfer to a 4-quart casserole dish lightly coated with cooking spray or oil. Add spinach, rice, and 1 cup of the cheese.

In a small bowl, combine eggs, milk, salt, and pepper. Stir into meat and rice mixture and mix well.

Bake, covered, 30 minutes. Top with spaghetti sauce and remaining cheese and bake, uncovered, until bubbly, about 15 minutes longer.

Yield: 6 servings.
