1 lb ground lamb or beef
1 tbl unsalted butter melted
1 tbl thinly-sliced green chiles
(serranos or jalapenos)
1/2 cup chopped fresh cilantro - (lightly packed)
1 cup finely-chopped onion
1 tsp garam masala
1/2 tsp freshly-ground black pepper
Coarse salt to taste
Instructions:
Instructions: Combine all ingredients thoroughly and shape into logs that can be threaded onto thin skewers or cooked directly on the grill. Either cook on the grill (2 inches from the heat source) or fry on a well-seasoned heavy griddle. Figure about two minutes on each side for rare, three minutes for medium and four minutes for well-done.
