1/2 cup whole wheat pastry flour
1/4 cup sweetened instant cocoa powder
1/2 tsp baking soda
1/4 tsp salt
2 x egg whites or 1 large egg
8 oz vanilla non-fat yogurt (1 cup)
2 tbl low-fat milk
1 tsp vanilla extract

Instructions: Makes 1 9-inch cake, about 12 servings

I devised these yogurt-based, cake-like brownies so that this treat can be enjoyed with a minimum of guilt. Without the addition of the optional chocolate chips, this is a practically fat-free cake; with them, the fat content is still mercifully low.

Preheat the oven to 350 degrees.

Combine the flour, cocoa powder, baking soda, and salt in a mixing bowl. In another bowl, combine the egg whites with the yogurt and vanilla and stir until well blended.

Make a well in the center of the dry ingredients and pour in the wet mixture. Stir vigorously until thoroughly combined. Stir in the chocolate chips if you are using them. Pour into a lightly oiled 9- by 9-inch baking pan. Bake for 30 minutes, or until the sides of the cake begin to pull away from the pan, and a knife inserted in the middle tests clean.
