Instructions: Place 1/4 cup of milk in a cup and sprinkle gelatine over. In a saucepan, combine sugar, cornflour or custard powder, cocoa and salt. Add remaining 3/4 cup milk and whisk to combine. Bring to the boil, stirring all the time until the mixture thickens and is glossy. Remove the pan from the heat, add gelatine and mix thoroughly. Add chocolate, vanilla and peppermint oil and stir to combine until the chocolate melts. Transfer to a large bowl and chill, stirring every 15 minutes.
After 1 1/2 hours, remove from the fridge and fold in the dessert whip until no white streaks remain. Spoon into individual glasses or bowls and chill until required. Email this Recipe:
