Instructions: Take fish fillets and rub in salt, pepper and garlic salt. Mix cornmeal and cracker crumbs in a bowl. Mix well. Sprinkle in white pepper. Mix eggs and milk, be sure to mix well.
Pour oil into a deep pot and heat almost to boiling. Peanut oil is best. Dip each fillet into milk and egg mix. Roll each in cornmeal and cracker mix. Dip in hot oil. Each fillet will take 2 minutes or less to cook to a golden-brown. Email this Recipe:
