Instructions: Peel shrimp, leaving tails intact; devein, if desired. Place shrimp in a large shallow dish. Combine eggs and next 3 ingredients; pour over shrimp, stirring gently. Cover and marinate in refrigerator 3 hours, stirring occasionally.
Pour oil to depth of 2 inches into a Dutch oven; heat to 375 degrees. Combine cracker crumbs, cereal, and cornmeal. Remove shrimp from marinade, discarding marinade. Dredge shrimp in cracker mixture, and fry, a few at a time, until golden. Drain. This recipe yields 4 servings. Email this Recipe:
