4 x whiting or red hake fillets (6 to 8 oz ea)
6 med tomatoes diced
8 x fresh basil leaves - (to 10) chopped
4 x garlic cloves minced
1/4 tsp freshly-ground black pepper
1 tsp salt
1/2 tsp oregano
2 tbl olive oil
Instructions:
Instructions: Heat olive oil. Saute minced garlic in oil until the garlic softens. Add tomatoes, basil, salt, pepper, oregano, and red pepper. Simmer for 5 to 7 minutes.

Preheat oven to 350 degrees.

Rinse hake fillets in cold water and pat dry. Arrange fillets in baking dish and pour tomato basil sauce over the fish. Bake until fish flakes easily, approximately 15 to 20 minutes.

This recipe yields 4 servings.
