Ingredients:
Amount Ingredient
1/2 cup Diced dried pineapple
1/2 cup Diced red bell pepper
1/4 cup Chopped fresh cilantro
2 tsp Minced jalapeno pepper
1/8 tsp Salt
1/4 cup Fresh lime juice
1 tsp Vegetable oil
4 x Halibut steaks, (4-ounce)
(1 inch thick)
1 tsp Vegetable oil
1/8 tsp Salt
Vegetable cooking spray
Instructions:
Instructions: Combine first 7 ingredients in a bowl, and stir well. Let stand at least 15 minutes, stirring occasionally.

Brush fish with 1 teaspoon oil, and sprinkle with 1/8 teaspoon salt. Set aside.

Prepare grill.

Place fish on grill rack coated with cooking spray, and cook 5 minutes on each side or until fish flakes easily with a fork.

Yield: 4 servings

(serving size: 3 ounces fish and 1/4 cup salsa).

NOTES : Serve fish with pineapple salsa and lime wedges, if desired.
