1/2 cup slivered almonds
1 tbl margarine or butter
1 cup uncooked barley
1 cup chopped carrots
1 bn green onions sliced
2 x celery ribs sliced
3 x garlic cloves minced
1 lb lean smoked ham cubed
2 tsp dried basil leaves
1 tsp dried oregano leaves
1/4 tsp freshly-ground black pepper
2 can reduced-sodium beef broth - (14 oz ea)
Instructions:
Instructions: Preheat oven to 350 degrees. Spray 13- by 9-inch baking dish with nonstick cooking spray. Spread almonds in single layer on baking sheet. Bake 5 minutes or until golden brown, stirring frequently.

Melt margarine in large skillet over medium-high heat. Add barley, carrots, onions, celery and garlic; cook and stir 2 minutes or until onions are tender. Remove from heat. Stir in ham, almonds, basil, oregano and pepper. Pour into prepared dish.

Add broth to medium saucepan; bring to a boil over high heat. Pour over barley mixture. Cover tightly with foil and bake 20 minutes. Remove from oven; stir in green beans. Bake, covered, 30 minutes or until barley is tender.

This recipe yields 8 servings.
