Instructions: Rinse beans in a large pot; discard shriveled beans and any small stones.
Add 8 cups of cold water. Let stand overnight or at least 8 hours. Remove beans that have risen to top, drain, and rinse. Return beans to pot and add ham, onion, brown sugar, garlic clove, salt, pepper, Tabasco, and enough water to cover beans-plus an inch more. Bring to a boil; reduce heat and simmer 3 hours, or until beans are very tender. Add more water if necessary during cooking time. Serve with cornbread. Email this Recipe:
