8 x sandwich rolls - (3 oz ea)
1 cup Tomato Jam (see recipe)
12 oz thin-sliced Spanish cured ham
(or prosciutto)
4 oz Manchego cheese thinly sliced
(or parmesan cheese, shaved)
4 cup arugula leaves - (abt 4 oz) rinsed, crisped
Instructions:
Instructions: Slice rolls in half horizontally and spread top halves generously with Tomato Jam. On bottom half of each roll, equally layer ham, cheese, and arugula leaves. Place top of roll on filling.

This recipe yields 8 sandwiches.

Comments: Manchego is a firm Spanish sheeps-milk cheese. Make and wrap sandwiches just before packing.
