Instructions: Grate the onions in a large bowl.
Peel and grate the potatoes, adding them to the same bowl. Squeeze out as much moisture as possible and discard it. Add the remaining ingredients and mix well. In a large, non-stick pan, add about 1/4" of oil and heat to 325 degrees (not smoking hot!) Add 1/4 cup portions of the latke mixture and pat it down until flat, about a 1/4" thick. Fry until golden brown on each side and cooked through. Adjust the heat as necessary. Line a pan with paper towels to absorb any excess oil and keep in a low oven until ready to serve. NOTES : Have sour cream and applesause on hand to serve with these delicious potato cakes. Email this Recipe:
