2 stk butter or margarine -- softened to room
temperature
2 cup sugar
3 x tabllespoons leman juice
4 x eggs
3 cup all-purpose flour
2 tsp baking powder
3/4 tsp salt
1/2 cup evaporated milk
1/2 cup milk
Grated peel of 2 lemons
1/2 cup flake coconut
----------------- Glaze ----------------
1/2 cup lemon juice
Instructions:
Instructions: Preheat oven to 350F. Grease and flour two 8x4-inch loaf pans and set aside.

In a large mixing bowl, beat butter, sugar, and lemon juice until fluffy.

Add eggs, one at a time, beating well after each addition. Sift flour, baking powder, and salt together. Combine evaporated milk and milk. Add dry ingredients and milk alternately to butter mixture in three additions. Do not overheat. Fold in lemon peel and coconut. Pour into prepared pans. Bake for 1 hour and 20 minutes or until a toothpick inserted in the center comes out clean. Remove from the oven. Combine lemon juice and sugar. Brush on tops of loaves to glaze. Cool for 20 minutes. Remove com pans and cool completely.

Makes 2 loaves.
