1 lb orrechiette, bow tie, or penne pasta
2 tbl olive oil
1/2 lb boneless skinless chicken breasts cut 1" chunks
6 x plum tomatoes cut 1/2" chunks
2 sm yellow squash cut 1/2" chunks
1 sm zucchini cut 1/2" chunks
1 tsp dried oregano
1/2 tsp dried basil
1/2 tsp salt
Instructions:
Instructions: Cook the pasta according to the package directions; drain.

Meanwhile, in a soup pot, heat the oil over medium-high heat. Add the chicken and cook, stirring to brown on all sides.

Add the remaining ingredients and cook for 10 to 12 minutes, or until the vegetables are tender.

Add the pasta and toss until evenly coated. Serve immediately.

This recipe yields 6 servings.
