Instructions: Combine cereal and water in a bowl; let stand 5 minutes. Dissolve baking soda in buttermilk; stir. Add buttermilk, oats, and next 6 ingredients to cereal; stir just until dry ingredients are moistened.
Spoon batter into muffin pans coated with cooking spray, filling two-thirds full. Bake at 375 for 15 minutes. Remove from pans; let cool on a wire rack. Yield: 20 muffings (serving size: 1 muffin).
