1 cup shreds of wheat bran cereal such as All Bran
1 cup water
1 tsp baking soda
1 cup nonfat buttermilk
1 cup quick cooking oats uncooked
1 cup chopped dried peaches
1 cup raisins
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1/3 cup sugar
1/2 tsp salt
Instructions:
Instructions: Combine cereal and water in a bowl; let stand 5 minutes. Dissolve baking soda in buttermilk; stir. Add buttermilk, oats, and next 6 ingredients to cereal; stir just until dry ingredients are moistened.

Spoon batter into muffin pans coated with cooking spray, filling two-thirds full. Bake at 375 for 15 minutes. Remove from pans; let cool on a wire rack.

Yield: 20 muffings (serving size: 1 muffin).

NOTES : For best results use coated muffin pans or foil instead of paper liners.
