1/2 lb Boneless skinless chicken breasts diced
2 tbl Chopped onion
2 tbl Vegetable oil
8 sm Onions
4 x Carrots chopped
3 x Celery stalks chopped
4 x Potatoes quartered
1 x Garlic clove
1 can Mushrooms - (3 oz)
4 sprg Parsley
1/4 tsp Thyme
2 cup Red burgundy wine
Instructions:
Instructions: Preheat oven to 350 degrees.

In a large skillet, brown chicken and chopped onions in oil. Add whole onions, carrots, celery, potatoes, and garlic. Cook 3 minutes. Add mushrooms, parsley, and thyme. Arrange in a 2-quart casserole dish. Add wine. Cover and cook 2 hours; stir occasionally. Thicken with cornstarch and water at end of 2 hours.

Serving size is 1/6 of recipe.
