Ingredients:

1/4 cup all-purpose flour
2 tsp paprika
1 tsp salt
1/2 tsp black pepper
1/2 tsp dried thyme
2 lb stewing beef cut in small cubes
1 tbl vegetable oil
3 cup beef stock
1 x 7.5 ounce can tomato sauce
2 x onions chopped
2 x cloves garlic
1 cup diced carrots (about 2 medium)
1 cup chopped celery (about 2 stalks)
2 x potatoes peeled and diced
Instructions:
Instructions: In a bowl or plastic bag, combine flour, paprika, salt, pepper, and thyme. in batches, add beef to flour mixture and toss to coat. Transfer to a plate.

In a large skillet, heat half the oil over medium high heat. Add beef in batches and cook, adding more oil as needed, until browned all over. With a slotted spoon, transfer beef to crockpot.

Add remaining ingredients to crockpot. Cover and cook on low for 8- 10 hours or on high for 4-6 hours, until veggies are tender. Remove and discard bay leaf before serving.

NOTES : Freezes well. Add 1/2 cup water to soup when reheating.
