Ingredients:
Amount Ingredient
1 tbl olive oil
1 lrg onion finely chopped
4 x boneless skinless chicken thighs chopped, (abt 1 lb)
1/4 lb smoked turkey sausage finely chopped
3 x garlic cloves minced
1 tsp dried thyme leaves
1/2 tsp freshly-ground black pepper
4 tbl tomato paste
2 tbl water
3 can great northern beans - (15 oz ea) rinsed and drained
1/2 cup dry bread crumbs
Instructions:
Instructions: Heat oil in large skillet over medium heat until hot. Add onion; cook and stir 5 minutes or until onion is tender. Stir in chicken, sausage, garlic, thyme and pepper. Cook 5 minutes or until chicken and sausage are browned.

Remove skillet from heat; stir in tomato paste and water. Place beans and chicken mixture in slow cooker; cover and cook on LOW 4 to 4 1/2 hours.

Before serving, combine bread crumbs and parsley in small bowl; sprinkle over cassoulet.

This recipe yields 6 servings.
