Ingredients:
Amount Ingredient
Vegetable oil spray
2 lb Halibut fillets
(or other firm fish steaks)
2/3 cup Thinly sliced onion
1/2 cup Sliced fresh mushrooms
1/3 cup Chopped tomato
1/4 cup Chopped green bell pepper
1/4 cup Chopped fresh parsley
3 tbl Chopped pimiento
1/2 cup Dry white wine
2 tbl Fresh lemon juice
1/4 tsp Dill weed
Black pepper, freshly ground to taste
Instructions:
Instructions: Preheat oven to 350 degrees. Lightly spray a covered baking dish with vegetable oil.

Rinse fish and pat dry.

Arrange onion slices in the bottom of prepared baking dish. Place fish on top. Set aside.

In a bowl, combine remaining vegetables. Stir to mix well, and spread over fillets.

In a small bowl, combine wine, lemon juice, dill, and black pepper. Pour over fish and vegetables. Cover and bake 25 to 30 minutes, or until fish flakes easily when tested with a fork. Garnish with lemon wedges.

This recipe serves 8.
