Ingredients:

2 cup Dry navy beans
6 cup Water or stock
1/8 tsp Baking soda
1 x Potato, grated
1 x Bay leaf
2 x Garlic cloves, crushed
1 x Onion, chopped
2 x Celery stalks, chopped
2 x Carrots, chopped
16 oz Tomatoes, canned, crushed or diced
Instructions:
Instructions: Wash and sort beans. Soak overnight or bring water, beans and baking soda to a slow boil. Let simmer 2 minutes and soak for one hour. Discard water and add 6 cups stock. Add potato, bay leaf, and garlic to beans and stock.

Simmer beans for 1 1/2 hours or until nearly done. Add onion, celery and carrots. Simmer 20 minutes or until tender. Add tomatoes simmer 10 minutes.

Season with pepper and serve.
