Instructions: Mix breadcrumbs and herbs together.
Season the lamb cutlets with lemon juice and spices. Dip in beaten egg and roll in breadcrumbs to coat. Cook in either of the following ways: In a pan: Heat oil in a pan, gently cook lamb over low heat for 4-5 minutes each side until golden brown. In the oven: Place lamb on a well oiled tray, brush with oil, cook at 390F/200C for 15-20 minutes until golden brown. Serve with lemon wedges. Email this Recipe:
