2 tbl Dijon mustard
1/2 tsp Minced garlic
1/4 tsp Freshly ground pepper
1/8 tsp Tarragon
1 lb Flank steak, trimmed of fat
1/3 cup Fresh bread crumbs
1 tbl Chopped fresh parsley
Instructions:
Instructions: 1. Heat broiler and broiler pan.

2. Combine mustard, garlic, pepper and tarragon in bowl. Spread half the mixture on one side of steak. Broil steak, mustard side up, 4 inches from heat source, 4 minutes. Turn meat over, spread with remaining mixture; broil 3 minutes more for medium-rare. Combine bread crumbs and parsley; pat evenly on meat. Broil 1 minute more. Let stand 5 minutes.

3. Slice steak thin, diagonally across the grain. Serve with sauteed broccoli rabe, okra or broccoli, if desired.
