Instructions: Put the chopped garlic and chilli in a pan with the olive oil and gently warm through without flying too hard the garlic should barely brown.
Meanwhile cook the pasta in plenty of salted water following the instructions on the packet. Stir the chopped herbs through the infused oil then drain the pasta reserving half a cupful of the cooking water. Add the lime zest to the pasta then fold through the herb and chilli oil salt and pepper and enough of the reserved cooking water to coat all the strands of pasta with a herby emulsion. Serve with a good squeeze of lime juice lots of black pepper and a stash of herb leaves on top. Serves 4 Email this Recipe:
