Instructions: TURKEY: Preheat oven to 325 degrees. Butter 1 quart covered casserole dish.
Combine first 8 ingredients. Carefully separate skin from turkey. Spread 1/2 of the butter mixture between skin and meat. Rub remaining butter mixture over turkey skin. Fill turkey with stuffing. Transfer remaining stuffing to dish, refrigerate. Place turkey on rack in roasting pan. Roast 3 hours, 45 minutes. Place dish with stuffing in oven 30 min. Let turkey stand 15 min. GRAVY: Skim fat from pan juices into pot. Heat, whisk in flour until smooth. Stir in broth, pepper and salt. Cook until thickened. Makes 12 servings. Email this Recipe:
