Instructions: To roast the garlic: Preheat oven to 400 degrees. Place garlic on a small sheet of parchment paper, and drizzle with olive oil. Place parchment and garlic on a slightly larger piece of aluminum foil, and wrap foil up and over garlic to enclose. Place on a small baking sheet, and bake until tender, about 1 hour. Remove from oven, and let stand until cool. Squeeze garlic out of skins, discarding skins; set aside.
To make the Herb Toast: Preheat oven to 350 degrees. Line a baking sheet with a Silpat baking mat; set aside. In a small bowl, combine parsley, thyme, rosemary, salt, pepper, and oil. Spread bread slices with garlic, then brush with herb mixture. Place in a single layer on prepared baking sheet, and bake until crisp and edges are beginning to brown, 10 to 12 minutes.
