1/4 cup low-fat low-sodium chicken broth
1 x garlic clove minced
2 tbl minced onion
1/4 cup minced carrot
1/2 cup short-grain brown rice
3 cup low-fat low-sodium chicken broth
1 tbl minced basil - (to 2)
2 tsp minced parsley
1 tbl lemon juice
Instructions:
Instructions: Heat the broth in a saucepan over medium-high heat. Add the garlic and onion and saute for 3 minutes. Add the carrot and saute for 3 minutes. Add the rice and saute for 2 minutes.

Add the broth, bring; to a boil, lower the heat, cover, and simmer until the water is absorbed, about 40 to 45 minutes. Add the remaining ingredients and serve.

This recipe yields 6 servings.

Serving size: 1/2 cup.
