Ingredients:

1 x (3-pound) broiler-fryer chicken
4 x bacon slices, minced
8 oz lean ground beef
1 x onion, minced
1 tsp dried mixed herbs, such as:
tarragon, thyme and oregano
2 clv garlic, crushed
5 tbl dry white wine
salt to taste
freshly ground pepper to taste
Instructions:
Instructions: Preheat oven to 325 F. Grease a 9x5-inch loaf pan. Remove and discard skin and bones from chicken meat. Finely chop meat. In a medium bowl, combine chopped chicken, bacon, beef, onion, herbs, garlic, wine salt and pepper. Spoon into greased pan; arrange bay leaves on top. Cover with foil.

Bake in preheated oven 2 1/2 hours or until juices run clear when center is pierced with a skewer. Cool slightly. Cover and refrigerate until chilled. Discard bay leaves. Cut into thin slices to serve.

Makes about 12 servings.
