1 qt /1 litre homemade chicken stock
1/2 cup /125ml dry sherry
1 lb /240g assorted fresh mushrooms (a combination of crimini,
shiitake, wood ear, enoki daki, etc.), cleaned and sliced prettily
1/4 lb /220g cooked chicken meat, chopped
1 cup /125g cooked rice (
1 x handful fresh flat-leaf parsley, chopped
1 sm handful fresh Genoa basil, chopped
1 sm handful fresh summer savory, chopped
1 sm handful French tarragon, chopped
1 cup /225ml fresh heavy (whipping, double) cream
1 x few gratings fresh nutmeg
Instructions:
Instructions: Bring stock and sherry to a boil. Add mushrooms and reduce to a simmer. Cook 3 minutes.

Add chicken, rice and herbs; cook 1 minute. Turn off heat and stir in cream. Taste and adjust seasoning.

Pour into a soup tureen and garnish with fresh chopped chives.
