1/2 lb lump crab meat
1/4 cup low-fat mayonnaise
1 tbl minced fresh parsley
1 tbl minced fresh tarragon
2 tbl minced scallions
6 oz low-fat cream cheese
2 x eggs beaten
1 tsp Dijon mustard
6 x English muffins split, toasted
Instructions:
Instructions: Combine the crab, mayonnaise, parsley, tarragon, and scallions in a medium bowl.

In a separate bowl, beat together the cream cheese, eggs, and mustard.

Spread the crab mixture over the English muffins. Spread the cream cheese mixture on top, and broil the muffins 6 inches from the heat source for 3 minutes. Add the tomato slices and broil again for 2 more minutes.

This recipe yields 6 servings.

Serving size: 1 English muffin, 3 ounces crab.
