Instructions: Cook beans in boiling salted water until crisp tender, about 8 minutes.
Drain. In a large skillet, heat olive oil. Add beans and toss to coat. Add the tomatoes, garlic and herbs. Saute one minute. Reduce heat to low and cook 5 minutes more. Season with salt and pepper. Sprinkle with cheese. Can be served hot or chilled. Yield: 4 servings. Email this Recipe:
