1 cup raw millet
2 cup water
1 lb firm tofu (Mori-Nu Lite)
2 cup chopped spinach
1 sm onion minced
2 x cloves garlic minced
1/2 tsp dried thyme
1/2 tsp fresh basil
1/2 tsp fresh tarragon
Instructions:
Instructions: Saute minced onion and garlic in a saucepan sprayed lightly with vegetable oil. Add herbs and then millet. Saute briefly. Add water and bring to a simmer. Simmer 25 minutes. Add tofu and spinach and simmer 5 more minutes.
