Instructions: Wash mushrooms and pat dry.
Remove the stems from the mushrooms and chop stems fine. Brush inside of mushroom tops with melted butter. Finely dice onions. Melt 1/2 the butter in a pan, add onion and garlic, cook 2 minutes without colour. Add mushrooms and cook a further 2-3 minutes. Remove from heat. Mix mushrooms and herbs into sausage mince and season well. Pipe or spoon sausage mixture into mushrooms, then dip sausage top into breadcrumbs. Arrange in a well buttered shallow roasting tray. Dot tops with butter and cook in a moderate oven 180C/350F until cooked through, about 10 minutes. Email this Recipe:
