1/2 cup all-purpose flour
2 tsp sugar
1/2 tsp Italian seasoning
1 tsp baking powder
1/2 tsp salt
1/8 tsp baking soda
1/2 cup milk * NOTE
1/4 cup butter melted ** NOTE
1 lrg egg beaten *** NOTE
8 x sun-dried tomatoes, oil-packed chopped ****NOTE
Instructions:
Instructions: Preheat oven to 400 degrees F.

Mix together flour, sugar, Italian seasoning, baking powder, salt and baking soda. Add combined milk, butter, egg and tomatoes; mix just until dry ingredients are moistened. Gently fold in goat cheese. Fill EKCO Bakers Secret Muffin Crowns muffin pan cups about 3/4 full ( about 1/4 cup batter ). Bake 10 to 12 minutes or until wooden pick inserted in center comes out clean. Let Muffin Crowns stand a few minutes; remove from pan. Cool on wire rack.

Makes 6 muffins.

Serving Ideas : A hearty soup.
