Instructions: The following herbs will thrive in equal parts of soil, sand and peat moss

with regular feedings of organic or commercial fertilizers. Consult your nursery for more specific advice on choosing and growing herbs.

Basil:
Growing Conditions: Sun. Keep soil mixture barely moist. Pinch tops to encourage compact growth.

Try It With: Tomatoes, squash, eggplant, fish, goat or mozzarella cheese,

lamb, chicken, eggs.

Great Partners: Garlic, marjoram, oregano, thyme, chives, diff, garlic, mint, parsley.

Dill:
Growing Conditions: Bright light with four hours sun. Slightly moist soil.

Try It With: Salads, vegetables, chicken soup, fish (especially salmon), cheese, eggs.

Great Partners: Basil, chervil, chives, garlic, mint, parsley, tarragon.

Lemon Balm:
Growing Conditions: Full sun. Keep moist constantly.

Try It With: Vegetable and fruit salads, fish, chicken, iced drinks.

Great Partners: Chervil, chives, fennel, mint, dill, parsley. (NOTE: Lemon balm is easily overpowered).

Mint:
Growing Conditions: Partial shade. Plant in container to prevent uncontrolled growth.

Try It With: Lamb, veal, fish, peas, mushroons, poultry, cucumbers, yogurt, creamy cheeses.

Great Partners: Basil, lemon balm, parsley, tarragon.

Oregano:
Growing Conditions: Sun and warmth. Keep barely moist. Harvest often to

prevent leggy branches.

Try It With: Tomatoes, meat, soups, poultry, salads, seafood, Italian or Southwestern dishes.

Great Partners: Basil, chives, cilantro, garlic, marjoram, mint, parsley,

thyme.

Parsley:
Growing Conditions: Full or partial sun. Keep moist, especially during germination. Harvest into winter.

Try It With: Just about anything.

Great Partners: All other hers. (Make a dried herb seem fresh by blending it with chopped parsley).

Rosemary:
Growing Conditions: Full sun and warmth; southern exposure. Keep soil slightly moist at all times.

Try It With: Meat, fish, poultry, potatoes, fruits, marinades, breads, beverages, seafood.

Sage:
Growing Conditions: Sun, preferably southern exposure. Water only when soil is completely dry.

Try It With: Beans, beverages, bread, fish, pork, veal, poultry, sauces, soups, stews, vegetables.

Great Partners: Garlic, marjoram, oregano, parsley, rosemary, thyme.

Tarragon:
Growing Conditions: Sun, humidity. Water only when dry. Trim often.

Try It With: Chicken, cheese, eggs, fish, veal, potatoes, rice, salads.
