Instructions: Mix together the mashed potato, butter, grated cheese, chives and seasoning to taste. Chill the mixture for easy handling.
Shape the potato mixture with well-floured hands into 8 flattened triangle shapes. Heat a little oil in a frying pan and fry the potato shapes in batches for 2-3 minutes each side until crisp and golden. Drain on kitchen paper and serve immediately. NOTES : Serve these delicious cheese and chive patties with a mixed salad or as an accompaniment to grilled fish, chicken or lamb chops. Email this Recipe:
