Stir in the peanuts and chickpeas. Mix the oil and lemon juice together, adding the salt and pepper to taste. Drizzle the dressing over the salad and leave to stand for 30 minutes for the flavours to develop. Sprinkle the cheese over the top of the salad before serving.
