1 cup all-purpose flour
1 cup whole wheat flour
3/4 tsp baking powder
3/4 tsp baking soda
3/4 tsp cinnamon
1/2 tsp ground ginger
1/2 tsp nutmeg
1 pch ground cloves
1 x egg
1 x egg white
3/4 cup brown sugar
3 tbl molasses
1/3 cup vegetable oil
1/2 cup raisins
Instructions:
Instructions: Preheat oven to 375F/190C.

1. In bowl, mix together flours, baking powder, baking soda, cinnamon, ground ginger, nutmeg and cloves.

2. In large bowl, beat egg and egg white with sugar, molasses and vegetable oil.

3. Add dry ingredients to egg mixture and combine thoroughly. Add raisins and candied ginger.

4. Pat batter into lightly oiled or parchment paper-lined 15 x 10-inch (40 x 25 cm) baking sheet. (To prevent burning, use an insulated baking sheet, or place one baking sheet on top of another of the same size.) Bake in preheated 375F/190C oven for 15 minutes, or until cooked through but not hard. Cut into squares while warm, and cool on racks.
