Instructions: Revised from 1 T butter to 1 tsp.
Boil chestnuts 20 min in 1 qt water, salted with 1/2 t salt; drain; peel skin; chop finely. Place chestnuts in 1 qt water with remaining salt, sugar and lemon zest. Cook 30 min; run through sieve. Add consumme blended with butter, flour, cayenne and parsley. Simmer 20 min; strain; serve piping hot. NOTES : Email this Recipe:
