1/4 lb coarsely-ground white turkey
1 tsp kosher salt
1/2 tsp freshly-ground black pepper or to taste
2 tsp chopped fresh sage
(or 1/2 tspn dried sage)
2 tsp chopped fresh thyme
(or 1/2 tspn dried thyme)
1/2 tsp ground ginger
1/2 tsp ground nutmeg
1 tbl Calvados
1/2 tbl finely-grated orange zest
Instructions:
Instructions: Combine well the turkey, salt, pepper, sage, thyme, ginger, nutmeg, Calvados, and orange zest in a bowl.

Spray a nonstick skillet with cooking spray and saute a small bit of sausage mixture to test for seasoning. Correct if necessary. Form the remainder into 6 patties, about 1/2 inch thick, and saute until browned on both sides and cooked through. Serve hot from the pan.

This recipe yields 6 servings.
