Instructions: Cream the yeast with the water.
Sift the flour and salt into a bowl make a well in the centre and pour in the yeast oil and milk. Mix to a firm but pliable dough adding a little more milk if necessary. Turn onto a floured surface and knead vigorously for 5 minutes. Place in a clean basin cover and leave to rise in a warm place until doubled in bulk. Knead the dough lightly then cut in half. Roll each piece into a 20 to 23 cm circle. Place the circles on oiled baking sheets and brush with some of the oil. Cover with tomatoes and sprinkle with the herbs and salt and pepper to taste. Add the cheese slices then top with the Parmesan and olives. Spoon over the remaining oil and leave to rise in a warm place for 30 minutes. Bake in a preheated hot oven 220 degrees C (425 degrees F) Gas Mark 7 for 25 to 30 minutes. Serve immediately. Serves 4 Email this Recipe:
