4 cup old-fashioned rolled oats
2 cup sweetened shredded coconut
2 cup sliced almonds
3/4 cup vegetable oil
1/2 cup honey
1 cup diced dried apricots
1 cup diced dried figs
1 cup dried cherries
1 cup dried cranberries
Instructions:
Instructions: Preheat oven to 350 degrees.

Toss the oats, coconut, and almonds together in a large bowl. Pour the oil and honey over the oat mixture. Stir with a wooden spoon until all oats and nuts are coated.

Spread mixture out onto a baking sheet. Bake, stirring occasionally, until golden brown, about 45 minutes.

Remove granola from oven, and allow to cool, stirring occasionally. Transfer to a large bowl. Add the apricots, figs, cherries, cranberries, and cashews; stir to combine. Store granola in an airtight container.

This recipe yields 12 cups.
