Instructions: Preheat oven to 400F. In large bowl of mixer, whip egg whites until triple in volume. Add cream of tartar and beat until soft peaks form. Set aside. Sift flour and cornstarch together into large bowl and set aside. Combine egg yolks and sugar in small bowl of mixer and beat until shiny and smooth. Fold yolks into egg whites. Gently fold egg mixture into flour mixture. Pour into sided 10x12 cookie sheet, spreading evenly across pan. Bake until top is a light golden brown, approximately 8 to 10 minutes. Remove from oven. Cool. Cut pieces to fit the bottom of the 8" square pan.
Variation 1. Add mini chocolate chips to mascarpone cheese/cream mixture. 2.Filling can be used between layers of a chocolate cake. Chocolate sauce is put on top of each layer and allowed to absorb before putting filling on top. Delicious. Email this Recipe:
