Ingredients:
Amount Ingredient
2 tbl corn oil (this is for
sauteing - try substituting with chicken broth)
2 x cloves garlic minced
1/2 cup red onion chopped, (6oz/185g)
2 can hominy grits rinsed and drained
3 lrg ripe tomatoes diced
2 x poblano peppers roasted, peeled,
cored, seeded and diced
1 x jalapeno seeded and minced
Instructions:
Instructions: Serves 6

Heat the oil in a large heavy skillet when hot add the garlic and onions: cook, stirring, over medium heat until the onions are translucent. Stir in the hominy, tomatoes and chilies; cover and simmer over low heat for about 15 minutes, or until all the ingredients are blended and the vegetables are tender. Remove and cover and sprinkle the cheese over the homin
hominy. Stir just until the cheese is melted and serve immediately.

IF you substitute the oil with broth AND use NF cheese the 6 servings its about .43 gm per serving!!
