Instructions: 1) In a 5 to 6 quart pan, stir pork, yellow onions, garlic, and 1/3 cup broth. Cover tightly, bring to a boil over high heat, then simmer over medium heat for 10 minutes.
2)Uncover and stir over medium-high heat until juices mostly stick to pan and turn deep brown, about 4 minutes. Add 2 Tbls. of the remaining broth; stir until juices are well browned, about 4 minutes longer. Add oregano and chili powder; stir for 15 seconds. 3) Stir in remaining broth, hominy, and green chilies. Bring to a boil, then reduce heat and simmer, covered, until flavors are blended, about 10 minutes. Season to taste with green onions and juice of lime. Its very simple, after the first time I made it , I didnt even need to read the recipe again. This is great when you have a cold, it just opens up your sinuses, (I like it hotter, so I add some hot sauce to the end. Ive even made it without the pork, the hominy is filling enough.)
