Ingredients:

1 cup All-Bran Cereal
1/4 cup lowfat buttermilk (1/2 %)
2 tbl lowfat buttermilk (1/2 %)
1/2 cup whole wheat flour pastry
1 tsp baking soda
1/4 cup honey
2 tbl honey
1 lrg egg
1/4 cup raisins or other dried fruit
Instructions:
Instructions: Regular whole wheat flour can be used instead of the pastry flour but I think the texture suffers.

Combine bran & buttermilk in a bowl. Mix well & set aside for 15 minutes.

Combine flour & baking soda in a large bowl & stir to mix well.

Add the bran mixture, honey & egg . Stir just until the dry ingredients are moistened. Fold in the dried fruit.

Coat muffin cups with Pam & fill 3/4 full.Bake at 350F for 16 minutes or until a toothpick inserted in the center comes out clean.

Remove from pans & serve warm or at room temp.
